Ummmm, Gypsy Kings, Altan - both excellent. David Bowie has done some interesting instrumentals as well.
 
Well, I listen mostly to techno music (often non-commercial), which doesn't have lyrics 80% of the time but often have voices, so it might be hard to pick a favorite:

Nah - techno is good too... although I must admit, I don't know much in the way of specifics.
 
most stuff by aphex twin is good vocal-less, especailly window-licker :)

I also like classical/barocco. Bach's Air, and 2nd movement of Beethoven's 7th symphony are very nice.

Tchaikovsky with 1812 Overture, and Holst with his "The Planets" series are pretty cool. Gershwin and his Rapsody in Blue is an old favourite.

I also listen to a lot of film score composers, such as John Williams, John Barry, Danny Elfman, Jerry Goldsmith, James Horner, Ennio Morricone, Randy Edelman, Hanz Zimmer and even a bit of Philip Glass and Vangelis for his work on Blade Runner.
