My recipe is pretty much the same but I put half brown sugar, half white sugar in it. If I use all white sugar, then I put vanilla in.
I've found leaving the bananas in a brown paper bag for three-four days gives me the perfect "rot factor".
As for topping, I'm partial to vanilla ice cream, myself.
