how are dual-channel dimms different from single

my desktop mobo is dual-channel capable, when i ordered it from dull i got 2x256MB 'single-ranked' dimms as opposed to the 'dual-ranked'. now i'm thinking about more memory for that desktop, i'd like my mobo to run in dual channel mode, as i've heard that with Intel chips the performance boost is fairly significant. does any have any solid information on this or know what the difference between single and dual channel dimms is?
 
dual channel "kits" are just exact matching modules.
I have run 2 completely different brand modules in one, but you are
more likely to get better performance, and stability out of the kit.
