I used to have an Epson printer and the ink would "run out" really fast... as in, the cartridge would report itself as being out of ink early to the printer, and there's a chip in there that remembers being out of ink, so refilling it would do no good because it would still say it's out of ink... and I took an "empty" one apart once, and there are sponges in there that hold the ink, and they were still almost halfway full. Plus, if the color ran out, you couldn't print with just the black, and vice versa.
It was an Epson Stylus Color 777 from summer 2001, so newer models may vary.
I have an HP Deskjet 3650 now that has cheaper ink, and when it says low on ink I can continue to print until the ink is literally empty (and the ink cartridges are cheaper).
