Dallas/Ft. Worth .... too much "city" for me ... but, we could drive 3 hours inland and stay in central Texas .. Brownwood, maybe :headbang:
 
Oh yeah, forgot about the allergies. We put cornmeal underneath the crust when we make the pizza so it slides off the wood paddle and into the oven easier. Most of it comes off in the oven or stays on the paddle but some makes it through. Unless, that is, you get the thick sourdough crust. No cornmeal underneath that one. :D
 
That still wont cover it. The oven would still be full of cornmeal powder that has fallen off of the crusts of other pies. It would be picked up as a matter of cross contamination.
