how do you beat your meat?

Hmmmm, besides - over beating meat just makes it go all limp & looking sadly devoid of life...gets very messy too....meat should only be beaten to a certain point before it's eaten IMO ;)
 
To say nothing of how dry an overbeaten meat can become...I like your recipe, AT. I think we'll go with that....Now..should we prepare a sauce to to enhance it?
 
Yes, we definitely need some sauce to make the meat more pallatable, I find it goes down much better when you add something extra. It makes the most unattractive meat easier to swallow too. And makes good meat even tastier.
 
Yes, some delicious clam sauce on the meat is certainly a good choice.....bit of hard work to get the sauce perfect, but in the end it certainly compliments the meat wonderfully.
 
Not much for clam sauce. Perhaps an asiago cheese sauce or some other creamy sauce. Or just a good marinara.
